In the Kitchen with Sweet Times Two

Beverley and I were excited to bake together today and before 10 am we were busy concocting sweets in Beverley’s kitchen.  Everything didn’t go as planned …but more about that later.  We had several triumphs that I’m happy to share with you.  Our first creation was Pumpkin Cinnamon Streusel Muffins.  Did I mention that I LOVE pumpkin?  These muffins did not disappoint.  They were moist and pumpkiny (Is that a word?) and cinnamony (Again?) Yum…like a pumpkin coffee cake.  And there’s oatmeal in the topping.  Oatmeal’s healthy.  Tell your family they can eat as many as they want!

Next, we attempted Caramel Apple Cookies.  We knew these were going to be yummy before we even popped them into the oven.  They smelled like a snippet of autumn…yes, a snippet…I was a teacher, you know!  The cookies were soft and chewy.  We didn’t even wait for them to cool before we dug in!  Delicious… and we did let most of the cookies cool.  We topped them with a drizzle of white chocolate…perfect!OLYMPUS DIGITAL CAMERA

Our last creation didn’t work as well as the others, but baking is all about trial and error.  We learned a lot from our first attempt at Lemon Macarons.  We now know that our meringue must be firmer and that our almonds must be ground more finely.  Nevertheless, every sweet deserves a pretty picture.
