Peppermint Swirl

Late last week, I entertained “the old gang” from my days as a teacher.  I reprised a treat I made last year at this time: a red velvet cupcake with peppermint buttercream.  The new skill that I used was to swirl the icing in two colours.  This is accomplished easily by drawing two lines on the inside of a piping bag ( from tip to top) in gel colour with a skewer before loading the piping bag with icing.  When filling the piping bag, place it in a tall glass to hold it steady and try to avoid touching the stripes.  When full, twist the bag closed, and your colour will swirl out as you pipe.  So easy and effective.  Try it!
